SMOOSHED GARBANZO SALAD

This savory and fun-to-make smooshed garbanzo salad is the perfect sandwich filler that is also great on crackers. It keeps you full and it travels extremely well - no soggy bread here! This tasty sandwich is our go-to when packing for a hike, river trip, or beach day. The salad itself is so diverse that you can put nearly anything on top or eat it as is! My favorite combination is served on sourdough bread and topped with avocado, hot sauce, and spinach. Let us know how you topped your sandwich!

Ingredients

  • 1 (15 oz) can of Garbanzo beans

  • 1/4 cup red onion - small dice

  • 1/3 cup dill pickles - diced

  • 3 tbsp egg-free Mayo

  • 1 tbsp pickle juice

  • 1 tbsp apple cider vinegar

  • 2 tsp whole-grain or stone-ground mustard

  • 3/4 tsp dried dill

  • 1/4 tsp turmeric (for color)

  • Salt and pepper to taste

Nichole’s favorite sandwich toppers (mix and match!) 

  • Greens: Kale/spinach

  • Avocado

  • Dairy-free cheese

  • Tomatoes

  • Bean sprouts

  • Hot Sauce

  • Carrots

Directions 

  1.   Drain and rinse garbanzo beans, then dump them into a medium to large mixing bowl.

  2.   Using a potato masher (or clean hands), smash up the chickpeas until they’re nearly all smashed - some bigger pieces are fine.

  3. In the same bowl as the chickpeas, add all remaining ingredients: red onion, pickles, mayo, pickle juice, apple cider vinegar, mustard, and spices. Mix with a spoon until combined. Adjust the flavor as needed.

  4. Serve on the bread, wrap, or even crackers, of your choice. Add your favorite extra toppings like spinach or avocado.
